Sometimes, when you have a rice meal for dinner, there is some rice left over. Always keep it! You can use it to make Black Bean & Rice Burger Patties, or it can be the basis for a quick stir fry meal like this, made with whatever vegetables you have on hand.
This recipe calls for certain ingredients, but they can be changed to suit your taste, or to use up what you have on hand. Other good vege options are:
- frozen corn kernels, peas, shelled edamame or green beans
- fresh zucchini, carrot, mushroom, cauliflower or celery
- anything else you think would taste great, perhaps bamboo root, or mung bean sprouts
The trick is to cut larger vegetables into pieces that are small enough to cook quickly. And if they are hard vegetables, that usually take a while to cook, then precook them quickly in the microwave before adding them to the stir fry.

Prepare the vegetables. Do the broccoli first, and add it to a bowl with the edamame, and microwave on high for approximately 1 minute.
Add the rice, garlic and ginger to a non-stick pan, along with a few tablespoons of water. Heat and stir until the rice starts to warm up, and the garlic starts to cook. Taste for moisture content, and add more water if the rice feels dry.
Add the rest of the ingredients and stir until they are all warmed through. It is good for the capsicum and broccoli to be undercooked, as this preserves their nutritious qualities. Taste and add more coconut aminos if desired. Serve and eat immediately.
