Quick Vege Fried Rice (no oil)

This is the perfect meal to make when you are short of time. Make it using left over rice and a selection of veges - fresh or frozen.

 1 cup cooked brown basmati rice
 1 tsp fresh ginger - finely grated
 1 clove garlic - finely chopped
 4 broccoli florets - carefully cut into mini florets
 ½ cup frozen edamame
 1 small red capsicum - diced
 1 spring onion - finely sliced
 2 tbsp coconut aminos

Prepare the vegetables. Do the broccoli first, and add it to a bowl with the edamame, and microwave on high for approximately 1 minute.

Add the rice, garlic and ginger to a non-stick pan, along with a few tablespoons of water. Heat and stir until the rice starts to warm up, and the garlic starts to cook. Taste for moisture content, and add more water if the rice feels dry.

Add the rest of the ingredients and stir until they are all warmed through. It is good for the capsicum and broccoli to be undercooked, as this preserves their nutritious qualities. Taste and add more coconut aminos if desired. Serve and eat immediately.
