Steve and I get a box of vegetables delivered every week from Wonky Box. They send a random mix of vegetables that are a bit "wonky", and there are plenty of them. The side effect of this is that, sometimes, I end up with more than I need!! This soup got developed the time we ended up with heaps of carrots.

It also corresponded with the time I bought a multi cooker, to help me with cooking beans. I had never pressure cooked anything in my life before, but had seen people doing it on MasterChef, so wanted to give it a try. The great thing about pressure cooking the soup is being setting it to cook then walking away. It makes the process much less time consuming!

This soup also makes use of the food processor to cut down on prep time. I will admit that one of the things that I sometimes get sick of, if all the chop-chop-chopping that is required in plant based cooking. So, this recipe is perfect for those days, because I can slam everything into the food processor and it's done. The wash up of the food processor is easy, just needing a rinse afterwards.

This soup has now become one of our favourites. The lentils give it an almost dahl like consistency. We like to have a massive bowl with a toasted chunk of Steve's Super Grain Bread on the side.

The soup also freezes well, for those days when cooking anything is too hard or time consuming. I tend to freeze it in single servings, to increase the flexibility of using them later. They can be defrosted and heated in the microwave successfully.

Place the onions and carrots in a food processor with the chopping blade. Process until the vegetables are cut into very small pieces. Depending on the size of your food processor, you may need to do this in two batches.

Add the carrot/onion mix to the bowl of your multicooker or pressure cooker. Add the rest of the ingredients, and stir everything together.

Close the lid, and set to the Pressure Cooker setting for Soup. Select a cook time of 30 minutes. Once the cooking has finished, allow the unit to de-pressurise before opening and serving.

Makes 6 main size servings, and 10-12 entree size servings.

CARROTS
Whilst this recipe calls for carrots, you can also use other non starchy root vegetables, if you have them. I have successfully combined parsnips and turnips with the carrots to make tasty soup.

PRESSURE COOKER/ MULTI COOKER
If you don't have a pressure cooker, no problem!! You can easily make this soup in a covered pot on the stove. The soup will likely need to cook a little longer. Cook it until the red lentils have "melted" from sight. You may need to add water, if the soup gets too thick. Remember to stir it from time to time, to prevent it from catching on the bottom of the pot.

FOOD PROCESSOR
If you don't have a food processor, you can prepare the vegetables by hand. I would suggest finely dicing the onion, and grating the carrot.
