I like to keep a jar of this in the door of my fridge, to have on hand to embellish any Italian style dish. It is perfect on top of pasta or risotto. And is great sprinkled on top of a vegetable pizza, fresh from the oven.
This "cheese" does contain fat from the nuts, and most nutritional yeast has salt in it, so it is not for everyone. But it is certainly better for you than actual parmesan.
You can substitute other nuts for the brazil nuts. I use them, as a small amount of brazil nuts helps provide selenium. And the texture is hard and fatty, which I think gives the "cheese" more presence on the plate.
The last nutritional yeast I got was from the bulk shop, and it had a brown colour. So, when I used it in this batch of "parmesan", I also added a sprinkle of turmeric to encourage it to look more yellow. Turmeric flavour is mild, so a small amount doesn't change the flavour.
Put all ingredients into a food processor (small one if you have it), and blend to a fine crumb.
Store in an air tight jar in the fridge.
Having trouble finding onion powder at the supermarket? I know I did. They seem to only stock onion flakes. I now buy it from my local Indian grocer. However, if you only have onion flakes on hand, use them. I have in the past, and you can get away with it.
