The other day, I really felt like having a nice big bowl of chunky chowder. The weather outside was grim, and I craved something comforting, but the contents of the fridge were random. So, I popped over to the recipe for Chunky Vegetable Chowder, and saw that it called for asparagus and capsicum. Damn!!! These are both summer vegetables, and here I am in the middle of winter, with different vegetables available – so here are the ingredients I put together:
I ditched the Asparagus, Capsicum and Broccoli from the recipe, and added in Leek, Celery, Kumara and a few Edamame Beans I had in the freezer. The rest of the ingredients and the method stayed the same. I added the Leek (quartered, then sliced thickly) & Celery (diced) in Step 1 with the Onions , and the Kumara went in with the Carrots & Potatoes. And this is how it turned out. Yum!!!
That’s the great thing about mixed vege soups like this. You can shift ingredients around to suit what’s in your fridge. I found that this version wasn’t as vibrant looking as the Summer version, but it gave just the warming food hug I was looking for.
