Eggy Mayonnaise, Oil, Dairy & Egg Free

This tofu based mayonnaise is a great alternative to oily egg based mayo. It uses black salt to give an eggy smell and flavour. Having the tofu base, it is much better for you than it's oily cousin.

 1 block UHT Silken Tofu (349g)
  tsp ground turmeric
 1 tsp black salt
 ¼ tsp ground black pepper
 ½ tsp garlic powder
 1 tsp dijon or whole grain mustard
 1 clove garlic, peeled and roughly chopped (optional)
 1 tbsp lemon juice

Place all ingredients into a small food processor, or blender, and blend until smooth. Taste and adjust seasonings, if desired.

Store in the fridge. Will last at least a week.
Yield: Makes 1 1/2 cups
