Potato Bites (no oil)

This is a great recipe for using up mashed potato. I often make extra mash, simply so I have enough to make these bites in the following days. I love chips, so these are a healthy alternative, to indulge in guilt free.

 1 quantity of Potato & Kumara Mash

Make the potatoes, according to the Potato & Kumara Mash recipe. When I am making mash for an evening meal, I often double the recipe, so that there will be leftovers.

Store the mash in a container in the fridge until it has gone hard, preferably overnight. Don't worry about how you place the potato into the container. You want it to have as many jagged edges, so that these brown in the oven,

Preheat an oven to 180C, Fan Forced.

Turn the mash out onto a board. It will be solid coming out of the fridge. Cut the potato into bite size pieces that are all approximately the same size.

Place the bites onto a wire rack, placed on top of an oven tray. Allow space between the bites, to allow them to cook all over. Any crumbs of potato left on the board at the end can be squashed together to make another bite.

Place the tray into the centre of the oven, and cook until the potato is warmed through, and the edges of the potato start to crisp. (Note: these will not get as crispy as fried potatoes, but will get brown edges, and a firm crust)

You can also use an air fryer to cook these bites.
