Easy Pressure Cooker Carrot & Lentil Soup

This recipe is super easy to prepare, with all the chopping done by the food processor. It uses ingredients that are inexpensive, and that I usually have in the fridge/cupboard. Once it is in the pressure cooker, you can get on with your day until it is ready to eat, so is a perfect meal when you don't have much time. It is the kind of soup that can become a meal - almost dahl like - which warms the soul. A great winter warmer!

 2 onions, peeled and quartered
 900 g carrots, washed and cut into chunks, about 3cm long - see notes below
 3 cloves garlic, peeled and crushed
 2 tsp cumin seed
 ½ tsp chilli flakes
 1.50 l water
 3 tsp vegetable stock powder
 1 cup split red lentils

Place the onions and carrots in a food processor with the chopping blade. Process until the vegetables are cut into very small pieces. Depending on the size of your food processor, you may need to do this in two batches.

Add the carrot/onion mix to the bowl of your multicooker or pressure cooker. Add the rest of the ingredients, and stir everything together.

Close the lid, and set to the Pressure Cooker setting for Soup. Select a cook time of 30 minutes. Once the cooking has finished, allow the unit to de-pressurise before opening and serving.

Makes 6 main size servings, and 10-12 entree size servings.

CARROTS
Whilst this recipe calls for carrots, you can also use other non starchy root vegetables, if you have them. I have successfully combined parsnips and turnips with the carrots to make tasty soup.

PRESSURE COOKER/ MULTI COOKER
If you don't have a pressure cooker, no problem!! You can easily make this soup in a covered pot on the stove. The soup will likely need to cook a little longer. Cook it until the red lentils have "melted" from sight. You may need to add water, if the soup gets too thick. Remember to stir it from time to time, to prevent it from catching on the bottom of the pot.

FOOD PROCESSOR
If you don't have a food processor, you can prepare the vegetables by hand. I would suggest finely dicing the onion, and grating the carrot.
