Classic Kiwi Onion Dip (dairy free)

This is my version of the Classic Kiwi dip, traditionally made with reduced cream and onion soup. While it is healthier than the reduced cream version, it is still a treat food to have only on occasion. Eat it when you have cravings for the tastes you grew up with. While it isn't perfect for you, it is way better than the reduced cream version. Serve it will a selection of raw vegetable crudites.

 1 349g carton of Silken Tofu
 1 packet Onion Soup mix
 1 lemon - the juice of
1

Add all ingredients to a small food processor or blender.
Process until smooth.
Store in an air tight container in the fridge.

Tofu: I have found that the most successful tofu for this recipe is the long life kind that you find on the shelf in the International section of most supermarkets. If you only have fresh tofu, this can work fine, but may taste a little grainy.

Onion Soup: This is not a healthy ingredient, as it usually contains salt, animal products and fat (check the label). So this recipe is definitely an occasional food only, and it is not vegan.
