Butter Bean Dip (no oil)

This is a version of hummus made with canned Butter Beans. It is super smooth, so makes a great dip. If you make it less runny, it can pass as a hummus too.

 1 400g can Butter Beans - drained, not rinsed, reserve the liquid
 1 - 2 cloves garlic - peeled, roughly chopped
 1 tbsp tahini (I use unhulled)
 ¼ cup lemon juice
 1 tsp ground cumin seed

Add all ingredients to the bowl of a food processor. Use a small one, if you have it.

Process to a smooth paste. Stop and scrape the sides from time to time to ensure even blending. Add reserved bean liquid until the consistency you desire is achieved.

Serve immediately, or refrigerate in an air tight container, for up to a week.
Yield: makes 1 1/4 cups
