Baba Ganoush is a silky dip made with smokey roasted eggplants. Combined with tahini, garlic and lemon, it is a great complement to Whole Food Plant Based dishes. It can be used as a dip, or as a thick dressing for salads and bowls.

 1 large eggplant - roasted, preferably in the barbeque, and peeled
 2 tbsp tahini
 2 tbsp lemon juice
 1 clove garlic - peeled and crushed
 ½ tsp ground cumin
 ½ tsp miso paste
 ground black pepper, to taste

Add all ingredients to a small food processor. Process until well combined with a creamy consistency. Taste and adjust seasonings if required. Serve immediately, or store in the fridge for up to a week. Sprinkle the top with a little smoked paprika, if desired.
