Asian Style Peanut Sauce – no oil

This is a versatile sauce that can be used as the highlight for many dishes. It comes into its own as a sauce for vegetables and noodles. Prep it on the weekend, for quick meals during the week.

 3 cloves garlic - peeled
 2 cm root ginger - thinly sliced, no need to peel
 2 tbsp peanut butter
 2 tsp miso paste, low sodium version if possible
 1 tbsp soy sauce
 ¼ cup lemon juice
 1 tbsp maple syrup
 1 tsp garlic and chilli paste (optional, depending if you like chilli heat)

Add all ingredients to a blender. Process until smooth. Store in an air tight container in the fridge for up to a week.
